Someone may have to re-name this one "Add on the Pounds Cake." I can't stop eating it. It was so easy and is so yummy.

Here is what you need:
flour, sugar, butter, milk, eggs, vanilla

About two hours before you are ready to begin, take the butter out of the refrigerator to soften.
Closer to baking time, preheat the oven to 325 degrees.

Put all ingredients in order into the mixer bowl of a heavy-duty stand mixer. Beat at low speed for 1 minute. (watch that first spin or two -- the flour will attack you) Scrape the bowl as you go. Beat at medium speed for 2 minutes.

Pour into a tube pan that has been sprayed with non-stick spray. Smooth the surface. This is a very thick batter.  Bake at 325 degrees for 1 hour and 30 minutes or until a wooden pick inserted in the center comes out clean.


Cool in a pan for 10 minutes. Remove from the pan and continue to cool completely on a wire rack.

We ate ours with crushed berries and whipped topping.


Add On The Pounds Cake

4 cups all-purpose flour
3 cups sugar
2 cups butter, softened
3/4 cup milk
6 large eggs
2 tsp. vanilla flavoring

Preheat oven to 325 degrees.
Place all ingredients into a mixer bowl and beat at low speed for 1 minute, scraping the bowl as you go. Beat at medium speed for 2 minutes.
Pour into prepared tube pan and smooth
Bake at 325 degrees for 1 hour and 30 minutes or until wooden stick comes out clean.
Cool in pan for 10 minutes and then cool completely on  a wire rack.

    Could you please modify these directions for those of us poor wretches like me who are not fortunate enough to have a stand mixer?

    It is such a dense batter, you really need the stand mixer. PERHAPS you could try a half-recipe. Cream the butter with just the sugar and add the other ingredients. Bake in a smaller pan and watch the bake time. I'm just guessing here. I MAKE NO PROMISES OF THE RESULTS OR THE TOLL IT WILL TAKE ON YOUR MIXER. Maybe you could hook the beaters up to your weedeater mower and have a go at it. (I could have guessed YOU would ask this.)

    This is the kind of cake my husband and boys LOVE to eat. Of course, hubby's a little bread with his butter kind of guy! I just might have to make this in the Bosch we bought this May. Anything to make sure I use the expensive equipment...

    I made a version of this last weekend for my birthday and it turned out great....the only variation in my recipe was the addition of a little lemon zest and instead of milk I used 7-up. (7-Up Pound Cake). I'd never made a pound cake before and my goodness, it is definitely a rich cake. Used my hand mixer and a huge bowl and had no problems at all. Creamed the butter and sugar, mixed in eggs and then alternated the flour with the liquid. Beated till it was all smooth. Normal cake routine.
